This most delicious flatbread impressed the most discerning of palates – “this is dairy free?!… How??” … it is THAT good!
Ingredients
One cup sweet potato steamed
One cup flour
Method
Steam sweet potato
Remove skin while still hot, mash it up in a mixing bowl
Add flour to mashed potato and mix to for a dough
Let dough rest for about 10 min covered with a damp tea towel
Knead dough until the gluten starts to form
Roll into a log and divide into 8 equal pieces
Form into disks
Roll out dough until it is 2-3 mm thick
Heat a skillet on medium heat
Cook rolled out disks until small bubbles form, then flip
Cook about 30 sec, flip until cooked to the way you like
