Bean Burrito and Guacamole

An absolute favourite in our household…
Helps that it’s a quick weeknight dinner fix as well!

Ingredients Filling

2-Tbsp avocado oil
2-onions finely sliced
8-mushrooms sliced
2-Tbsp Tomato paste
1/2- lime juiced
1-Tbsp cumin seeds toasted ground
2-Tbsp chilli powder
1-Tbsp coriander seeds ground
2-cans black beans rinsed
handful of cilantro (optional)
salt & pepper to taste

Ingredients Guacamole

2- avocados
1/4- onion finely diced
1-tomato finely diced
1-lime juiced
handful of cilantro (optional)
salt & pepper to taste

Brown Rice
Make to package directions

Method Filling

Heat oil in pan on medium heat
add onions cook until translucent
add spices, and mushrooms cook out liquid
add tomato paste cook until starts to stick on bottom of pan
use lime juice to de-glaze
add beans turn the heat down and cook for 15-20 min
salt and pepper to taste

Guacamole
Combined all ingredients in bowl and mix
