Power Muffins

Healthy Vegan Muffins

These oat banana muffins are great pre-workout,
or as a on the go morning starter, fast and easy.

Ingredients Dry
2-3/4 cups of raw oats blended into flour
1/4 cup ground flax
3 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp baking soda
1 tsp baking powder
Pinch of sea salt
1/4 cup mixed seeds
1/4 cup dried fruit
1/4 cup mixed nuts
1/4 cup chocolate chips dairy free

Ingredients Wet
3 ripe bananas
3 dates pitted
1 tbsp vanilla
1/2 cup almond milk
1 tbsp lemon juice


-Pre-heat oven to 350 degrees
-Mix all the dry ingredients together leave out seeds, fruit chips, and nuts
-In a high speed blender, blend all the wet ingredients together
-Mix in a bowl all the wet into the dry until no lumps
-Fold in the seeds, fruit, chips, and nuts
-Prep muffin tray with paper cups fill cups to top makes about 12
-Cook at 350 in oven for around 25-30 min
