Gooey Mac’n Cheese

Gooey Mac & Cheese

1-finely diced onion

1-clove of garlic minced

2-tbsp oil

1-can full fat coconut milk

1-cup almond slices

1-cup almond milk

1-cup nutritional yeast

1-tbsp apple cider vinegar

2-tbsp mustard

3-tbsp chickpea flour (or whatever you want for flour)

In a blender add almond slices, almond milk, nutritional yeast, apple cider vinegar, and mustard. Blend until smooth set aside.

In a pot heat up the oil on medium heat, add the onions and garlic. Cook until onions start to brown about 5 min give or take.

Add the coconut milk simmer 2 min then add the blended mixture, let simmer for about 8 min or until is starts to get creamy and thick.

Now add the Flour 1 tbsp at a time and mix that shit all in.

Put in your cooked pasta of choice about 4 cups dry I use chick pea pasta from Costco to keep it wheat free my girl can’t have the wheat.

stir it up and eat it I go all old school and put the ketchup on it like I did as a kid. BAM vegan Mac n Cheese
